I have never ever posted a recipe on this little blog.
It’s something I thought I wouldn’t do but this simple one is an Ivy favourite.
Good for when the girl won’t eat anything (like this week).
So here it is;
inspired by Squiggle Mum’s post, we made these on Monday.
2 cups flour (we use gluten free self raising - the plain makes the pancakes a bit too doughy)
1 teaspoon ground cinnamon
1 pinch of salt
1/4 cup sugar (we use brown)
2 eggs
1 cup applesauce (gluten free)
1 teaspoon lemon juice
1/2 cup milk (we use lactose free)

Mix all of the dry ingredients in together and then make a well.
Add slightly whisked eggs, milk, lemon juice and apple sauce.
Mix into a batter.
Heat fry pan to a medium heat - the apple sauce seems to make the mixture stickier so the lower heat seems to help with this.
Cook pancakes as normal
Serve with (lactose free) yoghurt.
